This is "Yamagata-dashi", which is made by finely chopping cucumber, eggplant, Japanese ginger, green onion, green perilla, kelp, etc. and mixing it with soy sauce, and topping it on the standard menu "Beef rice". No chemical seasonings, artificial sweets, or artificial colors are used.

In addition, this year, the "Premium Yamagata Dashi Beef Rice Set", which includes one of the domestic vegetables, tororo, and cold tofu and "Yamagata Dashi Beef Rice", is also available. The price is average 590 yen (tax included).
