will be held from February 10 (Fri.), 2012. An environmentally friendly SDGs menu is also available.

hybrid fish that combines the fast growth of tamakai, which can grow to about 2 meters, and the high quality fat and flavor of kuei. You can enjoy the chewy texture of Kue, and the flavor that has been further concentrated by our unique maturing technology.

is made from wild Kue, which is known as a "fantastic high-end fish" due to its rarity and the price of over 10,000 yen per kilogram. Large kue caught in the Kyushu region, weighing 10 kg or more, are carefully selected. You can enjoy its thick, firm flesh and superb fat.

Japanese natural cold flounder

Cold flounder is a premium fish that is in season during the winter and is characterized by its high fat content. Aged and processed to bring out its firm texture and flavor. Topped with a cold flounder enganwa.

KAMPACHI

Kampachi, a high-end fish, is landed daily in necessary quantities, and is then freshly caught and processed. To maintain freshness, the kanpachi is skinned and hand-cut in the restaurant before serving, so it is fresh, fatty, and has a crispy texture.

eel) Nigiri

A whole, live-fished conger eel is boldly placed on top of the rice. Cooked in a special broth, it is soft and fluffy, and is a very satisfying dish in terms of both taste and volume.

Toyama's specialty] Soy Sauce Black

Ramen: Seafood-flavored ramen noodles made with fish sauce and dried fish powder in a base of richly flavored koikuchi soy sauce. The black pepper accentuates the flavor. Green onions are available in western Japan.


The price is 450 yen. On sale from February 10. No take-out available.

Healthy Roll Salmon

Healthy Roll Shrimp

Vegetable sheet "Vegito" (carrot sheet) made from out-of-specification vegetables is used. According to the Ministry of Agriculture, Forestry and Fisheries, the incidence of out-of-specification vegetables is said to be about 20% of total production, and their use is being promoted to reduce food loss.


This product uses melt-in-your-mouth salmon and plump shrimp, respectively, topped with cucumber and onion. The ingredients are softened by dipping them in sushi vinegar and wrapped in veggies cooked to suit sushi, creating a gorgeous appearance.


The price is 165 yen each. Available from February 10 to March 9. No take-out available.

Soy Nuggets

: Made mainly from soybeans, which are currently the focus of much attention, these

nuggets

are juicy and have a texture similar to that of meat. The light flavor goes well with barbecue sauce.


The price is 360 yen. On sale from February 10 to April 6.

Curry Croquettes (2 pieces):

Croquettes made from fish meat that could not be used as sushi material, such as the fish off the bone, which is made into surimi and dredged with potatoes. The croquettes are flavored with curry, which gives them the same taste and flavor no matter which fish of any season is used in them.


The price is 115 yen. On sale from February 10.

Celebratory Extravaganza Ch

irashi-Sushi is an authentic chirashi-zushi dish that only a sushi restaurant could create, using an abundance of premium ingredients such as tuna, salmon, sea bream, crab meat, and eel. A special container resembling a rice container is used to create a sense of luxury.


The price is 2,050 yen. Available from March 3 to 5 (reservations accepted from February 4). Take-out only.

Due to limited quantities, reservations may be closed early.
