Collaboration with Odagaki Shoten, a long-established black bean store in Tanba Sasayama, including "Tanba Black Bean Tiramisu" and "Macarons (Black Bean)" at the Imperial Hotel!

The Imperial Hotel will be offering limited time only sweets "Tanba Kuromame Tiramisu" and "Macarons (Kuromame)" and bread "Kuromame" respectively. This is a collaboration with Odagaki Shoten, a long-established black bean store in Tanba Sasayama. They will be available at the hotel store "Gargantua" on the 1st floor of the Imperial Hotel Plaza Tokyo from October 7, 2022 to January 31, 2023.

Tanba Kuromame Tiramisu

Tanba Kuromame Tiramisu" is a To go version of "mamedou Tiramisu", which was created by pastry chef Yuko Kiji and sold at the Odagaki Mamedou Cafe, and arranged by Tokyo Chef Yu Sugimoto. The original praline made with roasted Tanba black beans, coffee cream, and whole chestnuts are wrapped in mascarpone mousse and topped with coffee syrup-soaked dough.

In keeping with the "gargantuan" atmosphere, the surface of the tiramisu is covered with a line of soybean flour cream and whipped cream and decorated with roasted beans and gold leaf. The black powder topping is made from dried coffee powder after the coffee has been extracted, and it is said to have added a refined bitterness to the flavor. The price is 1,600 yen (tax included).

Macaron (black bean)

Macarons (Kuromame)" are made from "Tanbakuro" (Tanba black soybeans) and are said to be filled with the various charms of Kuromame. Black beans are combined with caramel and white sesame oil to create a bittersweet praline, which is then sandwiched between macaroon dough kneaded with bamboo charcoal and surrounded by a layer of roasted black beans. The flavor of the ingredients can be enjoyed with the savory taste of the roasted black beans. The price is 400 yen.

Roasted Black Beans

Kuromame" is a brioche made with Odagaki Shoten's "Tanbakuro" cooked beans and soybean flour in the shape of Kuromame (black soybeans). The black bean paste is wrapped in brioche dough with black beans and soybean flour kneaded into it, then covered with cocoa-flavored brioche feuilleté dough and baked to create a buttery, Western-style flavor. The sweetness of the black bean paste and the savory aroma of kinako (soybean flour) are said to be a perfect match. The crispy outside and light and fluffy inside are said to be enjoyable until the very last bite. The price is 700 yen.
