Pumpkin Pudding For a fall treat! Here is a recipe for a smooth, melt-in-your-mouth pumpkin pudding. It can be served with bittersweet caramel sauce or with maple syrup.

Ingredients

(Pudding)
About 200g (7.05oz) pumpkin
2 eggs
30g (1.06oz) sugar
100cc cream
100cc milk

(Caramel sauce)
50g (1.76oz) sugar
2 tablespoons water
1 tablespoon hot water

Other toppings to taste As needed

Preheat oven to 160°C as preparation.

Preparation

Remove seeds and wattles from pumpkin and cut off skin. Cut into bite-sized pieces, place in a heatproof container and cover with fluffy plastic wrap, then microwave at 600W for about 4 minutes. Remove and roughly crush with a fork while still hot.

Remove from the heat and smooth the mixture by backing.

Crack the eggs into a separate bowl and mix, then add the sugar and scrape down the mixture.

Heat the milk and cream in a saucepan over low heat, and when small bubbles start to form, remove from heat. Add a little at a time to the bowl just above, stirring each time.

Add the previously combined mixture to the backed pumpkin and spread with a whisk. Pass the mixture through a strainer to make it even smoother.

Pour the pudding batter into the container and place the bat on a baking sheet in the oven.

Pour in hot water about half the height of the bat, then steam the pudding in the preheated oven for 20 to 25 minutes.

Remove from heat and refrigerate, then add whipped topping or other topping of your choice.

If

using caramel sauce If using caramel sauce, heat sugar and water in a small saucepan over medium heat and simmer until brown. Turn off the heat and stir in the hot water. Finally, remove from heat and remove from heat. Pour the pudding batter into a container before pouring it in.

If making the caramel sauce is too much trouble, you may make the pudding batter alone and pour maple syrup over it! Enjoy this seasonal sweet treat.
