Kiyo" is one of the varieties of plums produced in Yamanashi Prefecture, the fruit kingdom of Japan. Since it is difficult to cultivate and there are not many producers, it is regarded as a "high-class plum" due to its rarity and good taste. It is characterized by its soft pulp and excellent balance of strong sweetness and refreshing acidity. In addition, they are as big as peaches, so they are very hearty.

This time, a parfait using "Kiyo" is available in limited quantities. The parfait is a sumptuous arrangement of the pulp of a single Kiyo, combined with homemade granite (semi-frozen fruit juice, liqueur, syrup, etc. in a sherbet-like ice cream), vanilla ice cream, fresh cream, and a lush julée. This parfait differs from the plum, which has the image of a highly acidic fruit, and the sweet and juicy taste unique to Kiyo.
