Conveyor belt sushi chain stores usually use "blended rice", which is a mixture of rice with different brands, production areas, harvest times, etc., and kappa sushi also uses "blended rice". Kappa Sushi, which is celebrating its 48th anniversary, returns to the starting point of "what is delicious sushi" and pursues truly "delicious sushi" that is not bound by conventional customs. We adopted the single brand rice "Haenuki" and completely renewed the rice.
Haenuki, an original variety from Yamagata Prefecture, was born under abundant daylight hours and temperature differences between day and night. The sushi rice made with "Haenuki" stands firmly one by one and goes well with sushi. Freshly cooked is glossy and has a good shape, so it does not easily lose its shape even after it is cooked, and is characterized by a slight sweetness and moderate elasticity.
