Tottori Kotoura Grand Salmon will be available from Kappa Sushi. It will be available only at some stores in Tokyo, Kanagawa, Nagano, and Niigata prefectures. It will be on sale from July 12 to August 1.

Grand Salmon "Tottori Kotoura Grand Salmon" is a local brand of salmon produced by "closed-circulation land aquaculture," which has a low environmental impact and enables sustainable and stable production, and which Kotoura Town in Tottori Prefecture is focusing on as a catalyst for regional revitalization. The salmon is raised using high-quality underground water from Mt. Daisen that springs up in Kotoura Town, Tottori Prefecture, and has a hearty texture and a moderately light flavor. Kappa Sushi is the first restaurant to offer closed-circulation land-farmed salmon.
