Lake Saroma, which faces the Sea of Okhotsk in Hokkaido, is a "brackish lake" where freshwater and seawater are mixed, and is an environment suitable for growing oysters that contain abundant nutrients from the mountains and the sea. Year-round oysters grown in a rich natural environment are shipped directly from Hokkaido by air every day and are served fresh.
