The "sauce" that is entwined with yakitori and meatballs is tailored differently in the east and west according to the taste of the region. East Japan is finished with charred soy sauce and special soy sauce to reduce the sweetness, and West Japan is finished so that you can feel the sweetness as well as the soy sauce feeling.
