Chocolate is a blend of milk chocolate made from Latin American cacao beans and cacao mass. It is tailored to a taste that matches the refreshing feeling of eel sable. By sprinkling chocolate only on the lower half of the sable, it looks like an eel popping out of a lake of chocolate while balancing when eaten.
