I went to Hakuryu, the originator of Morioka Jajamen

Morioka City, Iwate Prefecture. What do you think of when you think of "special gourmet food"? Wanko soba? Jajamen? Cold noodle? Yes, you can't miss the "three major noodles".

The "Pylon" I visited this time is a Chinese restaurant that is said to be the originator of "Morioka Jajamen", one of the three major noodles. When I asked the main store, the regulars were very kind.

It may be a little difficult to enter

The Hakuryu Main Store is located between the Morioka Castle Ruins and the Iwate Prefectural Office. The exterior looks like a local restaurant. People who are not used to it may be a little difficult to enter.

The inside of the store is mainly counter seats. There are a few table seats, but it's not for groups. On the contrary, it is very easy to enter even if you are alone.

Finally, "It's the first time"!

The writer (young lady) visited at about 16:00, halfway between day and night. Even so, the store was about 80% full, and everyone was sipping jajamen.

Of course, I also ordered Jajamen. Choose from small, medium, and large. While I was waiting for the noodles to boil, I was reading the "delicious way to eat" on the menu ... A regular dandy man who happened to sit next to me taught me how to eat.

1. Mix!

Hakuryu's Jajamen has chopped cucumber, ginger, and miso on top of the noodles. First, mix the miso, noodles and cucumber. Mix it from the bottom with a crunchy texture!

I've been here for a long time. Somehow, it tastes as you would expect! The taste of udon noodles, miso and cucumber. It's simple and delicious, but I feel like I'm lacking in punch.

2. Mix !!

That's where seasonings come in. Add the chili oil, garlic and vinegar on the table and mix well with the ginger on the plate.

I was advised by a regular customer, "Anyway, you should add it little by little! If you're not good at it, it's delicious to add a lot of garlic." About 1 turn of chili oil, without vinegar for the time being. If you mix it with Jakojako ... What is this !!!

No, I could have imagined it. However, it is an indescribable taste that goes beyond that. A simple taste that you can never eat in a beautiful and elegant restaurant. For example, it might be like somen noodles that were sipped while wiping sweat from a grandmother in the country during summer vacation. Anyway, it's not as delicious as the eyeballs pop out, but it makes me want to eat it again.

Add vinegar for a refreshing aftertaste. Sly, sly. I wasn't satisfied and added garlic. Sly, sly. I should have made it large.

3. Mix !!!

By the way, short noodles and miso start to remain at the end of the game, but regulars say, "You don't have to eat everything." As it is said, when you break a raw egg on the table, put it on the counter.

Yes, we make the egg drop soup "Chitantan" (abbreviated as Chitan) (optional, not required). When you say "please", the lady at the restaurant will put the boiled noodle soup, miso, and green onions in the bowl.

Mix this again so that the seasoning melts well and blends in well !!! Adjust the taste with tabletop salt, pepper, chili oil, etc. to finish the soup to your liking. It's not so dashi, so it's rather dull, but it's nice. It slowly soaks into your body.

Nowadays, what is "Jajamen"?

To begin with, Jajamen is a home-cooked dish in northeastern China. It is said that the founder of Hakuryu remembered the taste he ate in China during the war and started offering it in Morioka, which is the beginning of "Morioka Jajamen".

Now that it has become a "Morioka specialty", it is offered at various stores. The secret of the taste is in "miso". The individuality of each store is reflected in the meat miso made by adding mashed vegetables and meat and various seasonings. The next time I go, I have to eat and walk!
