"Hankyu Train Sushi " introduced the other day. There was a lot of response, but there were some voices saying, "If it's a Hankyu train, why not?" Certainly, the "red bean color" of Hankyu train is exactly the color of yokan. When I lived in Kansai, I used to ride every day, so when I was eating cake while thinking that I missed it, I came up with it.

"Isn't it possible to make a Hankyu train with Yokan?"

So, I made "Hankyu Train Yokan". "Azuki color" is that of yokan. I won't lose to sushi! (There is a lot of fear)

● I thought about how to make it

Of course, the main body looks like "red bean". It is made by mixing commercially available bean paste and agar. I decided to make the window with Imoyokan. I decided to express the line of the door with a thin roasted egg.

Measure the size of the mold and consider the size and assembly method of each part while comparing it with the image diagram.

● Basic yokan is very easy

The ingredients to prepare are red bean paste, powdered agar, sweet potatoes, eggs, sugar, and jelly. The mold for hardening was for pound cake.

Youkan can be made simply by mixing commercially available "nerian" and agar. Very easy! With reference to Cookpad, we decided to use 100g (3.53oz) of red bean paste: 150cc of water: 1g (0.04oz) of agar as the basic composition.

The basic way to make yokan is to dissolve the bean paste in hot water little by little, add agar, boil for 1-2 minutes, and pour it into a mold. It seems that the point is not to boil when melting the bean paste. This time, we will repeat the work of making and hardening the "yokan stock solution" little by little in the same way as "two-color yokan".

● First of all, make windows!

First, make an Imo yokan to make a window. It seems that it is actually better to strain the boiled sweet potatoes or mix them with milk, but since it is troublesome, I just crushed the lentinized sweet potatoes and mixed them with agar. Rakuchin! Sugar is your choice.

Pour into a mold and wait for about 2 hours. When it hardens, cut out the shape of the window referring to the blueprint. If you wrap a ruler around it, you can cut it while measuring its length. But it's very difficult to cut straight.

● Make a door

Next, make the door. First, pour the undiluted solution to a position about 5 mm from the bottom of the container and wait for it to solidify. Since the amount is small, it will harden in an hour. Next, place the window for the door, pour the undiluted solution up to about 5 mm above the window, and wait for it to solidify again.

When it hardens, remove it from the mold and cut the edges to the size shown in the design drawing. Wrap a thin roasted egg that will be the "line" of the door. I added sugar to make it sweet, so it should go well with yokan. Wrap the wrap and let it cool so that the yokan and the egg are in close contact with each other.

● Finally make the main body!

Finally, I will start making the main body. Add the undiluted solution to about 1 cm from the bottom of the container, harden it, and place the door you made earlier. Next, pour the undiluted solution up to the line under the door window. When it hardens, place windows on both sides of the door and pour the stock solution until the door is hidden.

Finally, make a "destination sign" on the door, about the center of the vehicle. This time, I cut a square bag type konjac jelly and put it on it. A strategy to use the rounded (?) Part. After arranging the jellies, the last undiluted solution sink. Pour into a container. All you have to do is wait for it to solidify! Just in case, I chilled it in the refrigerator overnight.

● The finished product is finally unveiled

Well, the next day. It's finally time to remove it from the mold. get nervous…! Take it out while putting a knife in the edge and warming the bottom. It's big, so it's hard!

Turn it over, shape it like a train, and attach a pantograph. This time, I used a Bisco biscuit cut in half. If you insert the knife vertically, it will cut cleanly. I feel like I've become a master of cutting bisco.

Even so, I ended up with a stripe that I didn't remember. It became troublesome and I made the undiluted solution by the amount, so the color depth changed, and it seems that the red bean paste had settled in the diluted undiluted solution . You made it too much.
