A simple, inexpensive, and delicious recipe for "kitsune donburi" using abura-age (deep-fried tofu). The sweet and spicy broth that seeps out of the fried tofu is irresistible.

Material ( For 2 persons )
fried tofu one sheet
green onion one (object)
egg two (objects)
water (esp. cool, fresh water, e.g. drinking water) 180ml (6.09us fl oz)
soup stock made from granulated miso or soy sauce 1/2 teaspoon
soy sauce 1 tablespoon
alcohol 1 tablespoon
mirin 1 tablespoon
sugar 1 teaspoon
misjudgement 2 cups

Chew it and the fries sizzle! Here is a simple, inexpensive, and delicious recipe for "Kitsune-don". It is a local dish eaten in Osaka and Kyoto (in Kyoto, it is called "Kinugasa-don").

Simple recipe for "Kitsune-don (Kinugasa-don)" with deep-fried tofu

Ingredients (for 2 servings)

1 piece of deep-fried tofu
1 green onion
2 eggs
180 ml water
1/2 teaspoon Japanese soup stock
1 tablespoon soy sauce
1 tablespoon sake
1 tablespoon mirin (sweet cooking rice wine)
1 tsp sugar
2 cups rice

Directions

Pour boiling water over fried tofu to remove oil, and squeeze.


Cut in half horizontally, then cut into bite-size pieces about 2 to 3 cm wide.


Cut the leeks diagonally and crack the egg into the container to break it up.


Combine water, Japanese soup stock, soy sauce, sake, mirin, and sugar in a pot and bring to a boil, then add fried tofu.


When it comes to a boil, add green onions.


When the leeks are cooked, pour in the beaten eggs.


When the eggs have set to a certain degree, turn off the heat. The trick is not to mix too much.


Top with rice in a bowl or rice bowl and serve!


How does kitsune-don (Kinugasa-don) taste?
