Sakuhoro Cookies, also known as "Bourdonnage" (French), "Snowball" (English), or "Polvoron" (Spanish), are a western-style confectionary that uses no eggs whatsoever in its ingredients and is characterized by its light texture that crumbles in the mouth. Gion Tsujiri has been involved in a variety of Japanese and Western matcha confections, such as "Tsujiri-no-Sato," which is made by rolling rice cracker dough and filling it with rich matcha cream, and "Gatobubu Financier," a Japanese financier, and has collaborated with a variety of brands such as donuts and bread. Gion Tsujiri is now ready to launch its own line of sweets.
