Nut Stock Jitsu-Mori

The concept of Nutstock Jitsu-Mori is a modern Japanese confectionery with a generous serving of rich harvests. Japan is one of the most richly forested countries in the world. Nuts, nuts, and peas, symbols of the bounty of the forest, are used in abundance to create confections that incorporate both Japanese and Western ingredients and techniques.

Kyokuchimi Sandwich

The signature product, "Gokujimi Sandwich," is a chocolatey sandwich with roasted almond nuts crushed and baked into the dough. The more you bite into it, the more it pops and crackles, and the more flavorful it becomes. The almonds are enhanced with flavorful mustard barley, unrefined sugar, and rock salt.


In order to let the almonds' presence shine through without losing sight of each other's charm, we use "charcoal chocolat," which is made from cacao beans roasted over charcoal to enhance their flavor. The uniquely rich flavor and aroma resonates with the fragrance of the almonds. Charcoal chocolat is used in 30% of the chocolate ingredients.
