The soft and fluffy egg is the main feature of this dish. This dish is a reproduction of a popular staple menu item from the days when Hidakaya's predecessor, Rairaiken, was founded, and has been much requested since the introduction of "Tenshinhan" in the fall of 2021.

The richness of the egg, cooked one portion at a time in a wok with controlled heat, is blended into the soup to gently envelop the noodles. Hidakaya's standard Chinese noodle soup is served with a variety of ingredients, such as minced meat, green onions, and crab cakes, to give the soup a satisfying texture.
