Preparation
Rinse the strawberries in cold water, blot dry with kitchen paper, and remove the stems.
Mix strawberries, granulated sugar, and lemon juice in a saucepan and let stand for at least 1 hour. It is even better if you leave them overnight.


When the water from the strawberries begins to evaporate, bring to a boil over medium heat. When the water comes to a boil, remove any scum and reduce the heat to low. Simmer until thickened, stirring gently from time to time with a wooden spoon to prevent burning.
