Akita's specialty "Iburigakko" is made by pickling daikon radish in rice bran. At KALDI Coffee Farm, I found "Moheji Asazuke no Iburi-gakko-style", which allows you to easily enjoy the time-consuming taste. The price is 166 yen (tax included).
In addition to vegetables, cheese, salmon, and eggs are recommended for pickling. This time, I used cherry tomatoes, cucumbers, mozzarella cheese, and quail eggs.
Cut the cucumber into a size that is easy to eat. Put cucumbers, tomatoes, and a small bag of lightly pickled vegetables in a plastic bag, rub it in, and leave it in the refrigerator for about 2 hours.
Mozzarella cheese was pierced with a toothpick in several places and then pickled with quail eggs.
~ 2 hours later ~ Lightly pickled with a smoky scent is completed. Mini tomatoes and cucumbers retain the freshness of vegetables, but have a savory aroma. The saltiness is also moderate, and it is perfect as a snack for sake.
Quail eggs are also delicious. It's lightly pickled, so it doesn't have the same taste as boiled eggs, but it has a strong Iburi-gakko flavor. The addictive taste combined with the bite size will bring it to the pompon mouth.
Mozzarella cheese is also delicious as expected. The deep richness of cheese and the slight bitterness of smoked match. Of course, you can use it as a topping on salads and crackers.
Cooking time is less than 5 minutes and you can easily enjoy the smoked flavor and you are very satisfied. I wanted to pickle various ingredients.
