Tuna" Fair The "Aged Tuna" Fair is the result of the pursuit of the "best taste" of tuna, and in pursuit of even better taste, a new "Furi-Salt Processing" process has been introduced. Furisalt processing is a process that requires special techniques, such as using as little water as possible, adjusting the amount of salt to achieve this, and evenly applying salt to the surface of the tuna. By removing excess water, condensing the flavor, and maximizing the flavor with our unique maturing technology, we have created the "Furi-Salt Aged Tuna," the best standard tuna in the history of Kurazushi.

The Furi-Salt Aged Big Bee Tuna (Consistency) and Furi-Salt Aged Medium Tuna (Consistency), which take advantage of the Furi-Salt processing, will also be available. We recommend tasting the tuna with "a drop of soy sauce" to bring out its full flavor.

The fatty part of the tuna is carefully selected from the medium fatty part of the tuna. The best way to prepare chutoro (medium fatty tuna), which has more fat than lean tuna, is to cook it in the restaurant, and it is processed by furi-shio aging, which is adjusted accordingly. By selecting the optimum aging time and cooking method for each part of the tuna, the flavor of the high-quality fat and the flavor of the tuna from the furi-shio aging process can be tasted in good balance.
