Raw Cream Canelee

An evolutionary type of cannula that combines the special raw texture of cannula with whipped cream to create a delicious chilled cannula. In order to create a cannula that blends well with whipped cream and tastes good chilled, the dough, baking time, and temperature were fine-tuned, and the product was completed after more than 50 improvements and six months of planning.


The dough is blended with rich pure fresh cream and fragrant rum. The dough is slowly baked to have a soft raw texture in the center, while maintaining the glutinous texture characteristic of canelés. Alcohol content 0.1g (0.04oz) (in 100g (3.53oz)).
