St. Gallen Sakura

The cherry blossoms used in this beer are from Takato, Ina City, Nagano Prefecture, which is known as the best cherry blossom in the world and has been selected as one of the 100 best places for cherry blossoms. This beer was developed in connection with the use of apples from the city in the winter-only Apple Cinnamon Ale. The beer is flavored with cherry blossoms and leaves while using less hops, which give the beer its bitterness and aroma. Sixty kilograms of edible double-flowered cherry trees, which are also used to make cherry blossom tea, are used for each brewing. The aroma and taste of this beer is like cherry blossom cake.

Regular beer is made with barley malt, but this beer is made with 20% wheat malt for a softer mouthfeel. It is also made with "Rakufu Mai" sake rice grown at the Izumihashi Sake Brewery in Ebina City, Kanagawa Prefecture. It adds a rich, sweet flavor unique to rice to the beer, making it taste like Domyoji cherry cake.
