Sankt Gallen will release "Sankt Gallen Sakura", a beer flavored with real cherry blossoms and leaves, on February 19th. Seasonal until mid-April.

The cherry blossoms used are called "the first cherry blossoms in the world" and are from Takato, Ina City, Nagano Prefecture, which has been selected as one of the 100 best cherry blossom viewing spots. This beer was developed with the use of apples from the city for "Apple Cinnamon Ale," which is sold only in winter.

Suppresses the use of hops, which are the source of the bitterness and aroma of beer, and flavors with cherry blossoms and leaves. 60Kg of edible double cherry blossoms, which are also used for cherry blossom tea, are used in one preparation.

The cherry blossoms are harvested around GW every year, and the picked cherry blossoms are immediately salted. Sakura, salt, and water are added alternately, and force is applied to compress it to about one-third. Let it sit in the refrigerator for about a year to complete. By salting, sugar is separated and coumarin is produced, giving off a scent like sakura mochi. When using it for beer, expose it to running water from the previous day to remove salt before using it.

Normal beer is made from barley malt, but this beer uses 20% wheat malt to give it a soft texture. In addition, the sake rice "Rakufumai" cultivated at Izumibashi Sake Brewery in Ebina City, Kanagawa Prefecture is also used. The rich sweetness peculiar to rice is added to the beer to give it a taste similar to that of Domyoji Sakuramochi. Alcohol is 5%.
