A menu where you can enjoy 16 kinds of meat, mainly high-protein, low-fat wild bird and animal meat "Gibier", with homemade fermented sauce. The "pot-pickled venison," which debuted this time, is finished by pickling it in an original sauce that is a blend of multiple fermented ingredients such as amazake and fruits.
