This is a small cheese tart made from Anno potatoes from Tanegashima, Kagoshima prefecture. Cheese cream is poured into a crispy tart dough, baked to a brisk texture, and then Anno potato paste is squeezed into a Mont Blanc shape. The sweet Anno potato paste and the moderately sour cheese tart go well together.
