This sweet has been available since the end of December at the New York Lounge, a lounge on the 1st floor of Hotel InterContinental Tokyo Bay (Minato-ku, Tokyo). As the name suggests, it is a "hybrid" of creme brulee and souffle pancakes. It seems that fragrant caramelised creme brulee is placed on the fluffy pancake.

Two thick pancakes, thick cream, and sparkling strawberries are topped on the large plate. In addition, another plate has ice cream! You can choose from vanilla, chocolate, and matcha.

What I would like to pay attention to is the pancakes that have a fragrant scent. Seen from above, thanks to the caramelized caramelize, it's brulee properly. But when viewed from the side, it's a fluffy pancake. It is finished in an appearance that clearly shows each feature.

When I put the knife in, the brulee broke and the cream flowed out! After a crisp texture, you can feel the sensation of a knife in the pancake dough.

I also enjoyed the change in texture. Of course caramelized is crispy. The pancakes aren't too soft, but they're moist and melt in your mouth. No sweetness remains. You can enjoy the goodness of pancakes and the goodness of brulee without getting tired of it. This hybrid is quite high level.

When I asked the staff, by kneading tofu into the dough, it gave a chewy but fluffy texture, and agave syrup was used for sweetening. It seems that Wasanbon is used for fresh cream. The refreshing aftertaste may come from here.

Another point is that you can eat deliciously even when it gets cold. Because the pancakes are baked well, the cream does not soak into the dough, so there is no such thing as "unknowingly sticky ...".

The single item price is 1,429 yen. The drink set with a choice of coffee or tea is 1,900 yen on weekdays and 2,200 yen on weekends and holidays. Offer time is from 10:30 to 20:00. Weekdays are recommended because it is crowded on holidays.
