Matsuya's pork cutlet business "Matsunoya" has been renewed and changed to a new menu called "Large-sized fillet and set meal", so I tried it immediately.

This fin and. It has the same volume as loin and has a soft and juicy meat, but it has very little fat and almost no presence. The pork flavor is not so weak, but the unique refreshing flavor tickles the nose.

When you eat it with pork cutlet sauce, the contrast between the fried batter and the soft fins is good. It has a light taste, and you can use chopsticks as it is without using it as a side dish of rice.
It's a great deal, so when you taste it with shredded cabbage, it feels like you're enjoying a salad, even though it's fried. Even if I squeeze the lemon, the refreshing taste does not change so much, I just think that the nice citrus aroma and sourness have been added. Lemon enhances the rich meat taste of fat when sprinkled on loin, but it has a slightly different taste when it is fluffy fillet.
Even if you sprinkle with mustard, the spicy spiciness adds a little bit of umami to the tenderloin umami, but it does not give the impression that it is very sharp like roasted mustard.
