The special "flower algae salt" is made from 100% seawater from the Seto Inland Sea, and is finished into algae salt in Setouchi. The domestic seaweed to be combined is dried in the sun, then soaked in seawater and boiled down in a flat kettle to extract bittern in the seaweed soak. After drying it again, it is soaked in the bittern to fully bring out the umami component of the seaweed.
