According to Joël Robuchon, April Fool's Day is called "Poisson d'avril" in France. Poisson means fish and d'avril means April. There are various theories about the origin, but one of them is that mackerel can be easily caught in April, so the person who was fed this mackerel on April 1 is called "April fish". In France, it is a traditional practice to eat fish-themed sweets on April 1, and in chocolates and patisseries, fish-shaped chocolates, cakes and pies are displayed in stores. In addition to eating fish-shaped sweets, children also play tricks by secretly sticking fish-shaped paper on their backs.

This time, a crispy fish-shaped pie is decorated with seasonal strawberries and sweet and sour framboise. In addition, under a generous amount of fresh strawberries, almond cream and custard cream are combined with the "Lubab" confiture, which is often eaten in France, to create a well-balanced sweetness and acidity.
