Tofu Mug Cake

Tofu and pancake mix should be roughly 1:1 in g. Adjust according to the size of your mug.

40 g silken tofu (no need to drain)
40 g pancake mix
2 teaspoons salad oil

*Oil can be olive oil or butter

Combine tofu, pancake mix, and salad oil in a mug and mix until powdery.

Cover with fluffy plastic wrap and microwave (500W) for 2 minutes. If it looks raw when removed, add 30 seconds at a time and see how it turns out.

Done! It doesn't look great because there are some tofu grains scattered in the mixture, but this doesn't affect the taste.

How does it taste?

Moist and chunky, almost like steamed bread. The tofu flavor disappears and the salad oil gives it a rich flavor.
