Tsubaki Salon Ginza "Hokkaido Pancake"
Unprecedented taste and texture!

I found a god sweet that I would like people who like hot cakes to eat more than pancakes ...! It is "Hokkaido hot cake" offered at the cafe "Tsubaki Salon Ginza" from Hokkaido.

The store specializes in "hot cakes" that are slowly baked for about 30 minutes. The product name is hiragana, with the image of a simple and nostalgic “mother's hot cake” made from simple ingredients.

Hokkaido hot cake 2 types

Hokkaido pancakes are baked using only wheat flour, wheat flour starch, eggs, sugar beet, and salt. All ingredients are from Hokkaido. No additives or baking powder are used.

The food menu is only "Hokkaido Pancake"

There are two types of lineup: the sweets-based "Hokkaido Pancake Premium" (1,600 yen, tax not included, the same applies below) and the meal-based "Hokkaido Pancake Bolognese" (1,800 yen). The former is topped with fresh cream and comes with butter, Tokachi red beans, sugar beet molasses, and cheese. The latter is topped with butter and comes with sugar beet molasses, spicy bolognese sauce and a special salad.

Howahowa's plump!

I was shown the place where it was being baked. Fluffy meringue dough lined up on an iron plate. Slowly heat it and gently turn it over, then cover it and steam it.

It's thick and plump . It makes me want to take a picture of a side dish, but it will shrink over time, so don't miss it!

I'm sorry

The mouthfeel is fluffy! When chewed, the meringue melts and the chewy texture at the end. The gentle sweetness of eggs and sugar beet spreads on the tongue. What a soft, enveloping taste. It's like the vast land of Hokkaido ...

The sugar beet molasses in the back has a fragrant sweetness like tortoiseshell candy.

I was impressed by the unprecedented deliciousness of the various textures and tastes that come in multiple layers. It's strange that even though I ate it for the first time, it had a relaxing taste.

Hokkaido coffee together

The drink menu includes two types of coffee, "Hokkaido Classic Blend (Hot Ice)" and "Tsubaki Mild Blend" (800 yen each).

Hokkaido coffee is characterized by its deep and rich taste. It has a solid texture, bitterness, and a slight sweetness. Hokkaido Classic Blend is such a coffee unique to Hokkaido. On the other hand, Tsubaki Mild Blend is a little light and comfortable to drink.

Coffee is a great deal if you set it with pancakes

Coffee is brewed by "nel drip" with a hand-sewn cloth filter. The coffee, which is carefully and carefully extracted through a fine mesh, has a strong taste and is fragrant. Still, it is not astringent and can be drunk lightly, and it goes well with pancakes.

Looking at the coffee cup from above, the shape of a camellia flower is also cute!

By the way, beer and wine are also available, so it is recommended to have a cup of pancakes after work. There is also a rare "Takizawa Winery" wine. Especially, the squishy feeling of sparkling wine and the fluffy feeling of pancakes match!

We are particular about tableware and interior decoration

We are particular about interior decoration, interior decoration, and tableware, including plates and coffee cups.

The first thing I want you to see is cutlery! Knives, forks and spoons have very unique shapes. The spoon is like a shovel and the fork is like a hoe. It is said that it is an original cutlery that imagines the nature of Hokkaido covered with snow in winter.

If you look closely at the fork in the foreground, it looks like a hoe, right?

A table painted with lacquer from the top of the hemp bag for coffee, a chair that you can't stand up once you sit down, and a wooden carved bear gently placed here and there in the store. The cafe's commitment and Hokkaido love are scattered all over the place.

There is also a piano in the center of the store

By the way, Japanese paper is pasted on the walls and ceiling, and the pale pink part is dyed with strawberry pulp. The restroom is also amazing, so please stop by on your way home.

Wait 3-4 hours on weekends

There is a limit to the number of pancakes that can be baked at one time, and only 9 meals are served every 30 minutes. I often enter smoothly on weekdays, but on Saturdays and Sundays I sometimes wait for 3-4 hours ...!

If possible, it may be a good idea to write your name on the reservation table at the store in the morning, do a little silver bra, and then come back! Please note that we do not accept advance reservations over the phone.
