This is a "meat sandwich" that is made with a focus on all the pork cutlet, bread, and sauce so that you can fully enjoy the taste of the meat.

Bifukatsu uses 150 grams of A4 rank Saga beef fillet cut to a thickness of about 3 cm. Raw bread crumbs baked in a lava kettle are added to this, and it is fried in the original oil, which is a blend of rice oil and sesame oil, to make it "rare". It is characterized by its soft meat quality and modest sashimi, and it seems that it can be eaten deliciously without the fat solidifying even when cooled.

The bread that sandwiches the beef cutlet is a homemade bread that is soft and has elasticity and moisture. The sweetness of wheat is modestly mixed so as not to interfere with the taste of meat. It is cut to a thickness of 2 cm, butter is not applied to make it easier to mix the sauce, and only one side is toasted.

The sauce is based on Tonkatsu sauce and is finished with horseradish and lemon juice. In addition, brandy, leeperin sauce, and mustard add richness. It is said that this sauce creates a "sense of unity" between beef cutlet and bread.
