What looks like carbonic acid bubbles in the middle is a transparent lemon jelly with bubbles. Further below, there is plenty of pure white almond tofu.

Blueberries and apricot kernels each have a strong flavor, but with a peculiar lemon jelly in between, they are completely separated, so if you use a spoon carefully, you can enjoy each with almost no mixing. It is an interesting experience that different tastes come out as you dig into the gradation.
