At the Tonkatsu Kaiseki restaurant "Kozakura" in Takahama City, Aichi Prefecture, "Foie Gras Tonkatsu" (official notation is "Foie Gras Tonkatsu") is being offered as a new menu in April.

The foie gras pork cutlet is made from the branded pork "Sanshu pork" raised at the pig farm "Toyota Farm" in Aichi prefecture. The foie gras is sandwiched between thinly stretched fillets and finished in a pork cutlet. The sauce is an original based on "Maruya Hatcho Miso" made in Mikawa, Aichi Prefecture. The harmony between the richness of foie gras and the aroma of Hatcho Miso seems to be a habit.

Kozakura is a pork cutlet restaurant founded in 1967. Last year, the representative was handed down to the third generation, and this menu is planned as a new initiative. Taking advantage of his training experience at a French restaurant, he said that he realized the long-sought "fusion of pork cutlet and French cuisine".

The foie gras pork cutlet is offered as a single item (1,580 yen plus tax) or as a set of rice, miso soup, and one dish (1,980 yen plus tax). Both are limited in quantity.
