When you order the white souffle pancake, you can choose either "honey" or "maple" as the topping. This time, I chose Maple, which the clerk who responded to me also liked.
After a while, plump pancakes with a thickness of 3 to 4 cm and a diameter of 10 cm appeared in three layers. It is topped with "maple nut butter," which is a combination of roasted nuts, raisins, maple, and butter.

When I try to eat it, the dough has a slightly soft mouthfeel, but it has a plump and fresh texture! You can enjoy the finest texture that combines the softness of pancakes with the delicate moistness of souffle cakes.

It should be a combination of pancakes, cream, maple and sweets, but the reason why it doesn't become persistent when eaten together is because of the slight acidity of ricotta cheese and the cream that melts smoothly in the mouth. It's enough volume to share with two people, but this is also the reason why even one person can go crazy.

Different coffee beans are prepared depending on the day, and you can choose from two types, "fruity" and "bitter".
This time I ordered "Fruity". The beans of the day were from Ethiopia.
When you put it in your mouth, it will be wrapped in a gorgeous acidity and mellow sweetness that spreads quickly. The fruity taste that doesn't stand up is perfect for pancakes. Not to mention the food, but I personally think that coffee alone is worth the trip.
