Sake castella is a white castella dough with sake added, and is a sweet sandwiched with milk cream that is also a blend of sake. The dough is made by combining domestic wheat flour and domestic eggs with domestic glutinous rice flour and baking it moist. Roughness is laid under the dough to accentuate the texture. The surface decoration is molasses paste. When you put it in your mouth, the rich flavor of rice and jiuqu, which is typical of sake, spreads. On the other hand, triple chocolate eclair is an eclair that is made by stuffing chocolate cream blended with cognac and raw chocolate that melts in the mouth into two layers.
