Rare cheese-style grapefruit and blood orange sauce is a crispy crumble made from rice flour or almond poodle, spread on the bottom, and topped with rare cheese-style soy milk mousse, Italian blood orange sauce, and grapefruit pulp. The acidity of blood orange matches the rare cheese-like mousse, and it has a refreshing taste.

For soymilk mousse, we use soymilk cream that uses lactic acid bacteria in soymilk to give it a mellow flavor and richness like cheese. A refreshing flavor is added with lemon juice, and it is tailored to a rare cheese style.
