"Kinno Musashi" is a 20th anniversary project of the popular ramen shop, Menya Musashi. Special ramen is served once a month at each store over the course of a year. The ninth is Akihabara Iwatora "Mountain Kings-Noodles" (2,000 yen).

The "King of the Mountains" is the matsutake mushroom that is in season . It is boldly made into ramen, which is often eaten in delicate dishes such as soup and steamed clay bottles.

At first glance, I don't see any matsutake mushrooms, but ... what kind of cup is it?

● 200g (7.05oz) of matsutake mushrooms per cup !?

This ramen uses Matsutake mushrooms from "Matsutake Hut Umematsuen" in Matsukawa Town, Nagano Prefecture. Umematsuen is a very popular facility where you can enjoy cooking using matsutake mushrooms from your own mountain and "mushroom picking". About 100 reservations have been made before the season. It is said that the precious matsutake mushrooms were sold directly from the store owner's parents' home, and a luxurious cup was realized.

The amount of matsutake mushrooms used in one cup is about 200g (7.05oz) ! It's too virtuous to be able to eat it for 2,000 yen ...!

It is named "rich mountain soup", and its base is wild boar meat from Shinshu, which is the same as Matsutake mushrooms. Put a lot of pureed matsutake mushrooms there! This is also the cause of cloudiness.

The scent is of course rich. But then, not only the mouth but also the whole body is filled with the scent of matsutake mushrooms. It's so rich. The Matsutake. The shavings that occasionally touch the tongue also add to the presence of matsutake mushrooms. Matsutake mushrooms full of wild taste that are comparable to the "wild taste" of wild boar! Appreciate!

● Matsutake Part 2

The one that contains matsutake mushrooms, part 2 is "noodles".

However, this expression may be misleading. To be precise, matsutake mushrooms are mixed with noodles . It is obvious when you scoop the noodles. Along with the noodles, the elongated matsutake mushrooms are also lifted. It's one after another!

It is said that one large matsutake mushroom is cut and mixed as if it were noodles. What's more, it's made to sneak in from the middle to the bottom so that it can't be seen from the surface of the bowl.

● Plenty of mountain blessings

In addition to Matsutake mushrooms, "mountain blessings" are used abundantly.

For example, topping meat. Like the soup, it has homemade wild boar bacon from the local area. This fragrance is also transferred to the soup, creating depth. Also, the noodles are kneaded with chestnuts from the same area. It is packed with "mountain blessings".

However, it seems that it is unthinkable locally to cook wild boar and matsutake mushrooms together (that's right).

● There is salt from Nagano prefecture !?

After tasting the noodles, add rice balls to the noodles. It is made from new rice from Nagano prefecture and "mountain salt" from Nagano prefecture. What? Salt is also made in Nagano prefecture, where there is no sea !?

For mountain ingredients, use mountain seasonings

For some reason, "mountain salt" or "salt field" is salt made by slowly boiling down the source of "salty" Kashio Onsen. It's a "phantom salt" that is sold in a limited quantity of 50g (1.76oz) per person. The taste is said to be characterized by the sweetness of the salty fish.

After tasting the rice balls made with such "phantom salt" as they are, put them in the remaining soup and break them down.
