800°Degrees Neapolitan Pizzeria (800°Degrees), a pizza restaurant from the U.S., landed in Japan on April 15 in the NEWoMan commercial facility in front of JR Shinjuku Station. The restaurant will open its doors.

The most distinctive feature is the ability to freely customize toppings. At the preview, I actually experienced a "custom-made pizza"!


800°Degrees Neapolitan Pizzeria

800 Degrees, opened in 2012 by Chef Anthony Caron, is a pizza restaurant that allows diners to choose their own toppings. With 10 locations in Los Angeles (LA), the U.S. West Coast, and Dubai, the restaurant is attracting a lot of interest in opening overseas locations.

According to the restaurant, the best way to enjoy Neapolitan pizza is to taste the dough, and 800 Degrees uses only four ingredients: flour, water, sea salt, and yeast from the Italian company Cabuto. The dough is fermented and aged slowly to maximize the flavor of the flour.

A domed wood-fired oven is used for baking. Inside, the temperature is as high as 800 degrees Fahrenheit (about 425 degrees Celsius)! This temperature is the origin of the restaurant's name. The high temperature and quick baking process is said to result in a soft and chewy texture.

Experience Visa's custom-made!

The variations of "custom-made" are endless! You can create your own pizza by combining 5 base pizzas and about 40 different toppings. The En-Etsu editorial staff actually tried it out and made a special "En-Etsu Pizza".

First, choose a base pizza from among five types. Prices do not include tax.


Next, customers choose toppings from the 40 or so ingredients lined up on the counter. There are three categories of prices: 100 yen, 200 yen, and 300 yen, which are indicated by the number of stars in front of the showcase.




From the standard toppings such as shrimp, salami, bacon, and pepperoni, there are also a few oddities such as spinach + pomegranate, quinoa + mixed beans, and lotus root. It is tempting to add all kinds of toppings, but two or three are recommended. The baking conditions will vary.

By the way, I was thinking that I have experienced this feeling of moving around in front of the showcase before... but I realized that this is Subway. If Subway became "fully customizable," I'm sure it would look something like this! Ah neat.

The En-Eat editorial team made the base pizza verde (the green one). For toppings, we chose the autumn fish confit, dried tomatoes, and mushrooms. The pizza with the toppings is put into the large wood-fired oven on the left. It takes about 60 to 90 seconds to bake. During this time, you can order sides and drinks and pay the bill (again, similar to the atmosphere at Subway).


The receipt (ticket) you are handed should be handed to the staff in front of the oven. When the food is ready, they will call your name to let you know.

Now, your freshly baked pizza is in front of you! The staff cuts the pieces with a daring, quick, and brilliant hand. All that remains is to take it back to your seat and enjoy it.



The dough is thin, but chewy. Perhaps it is because the ingredients are simple, but it is refreshing. And the confit of the saury does a great job...! It is very hearty and does not fight with the aroma of the basil, and it plays the leading role. Needless to say, it goes well with tomatoes and mushrooms. I know it's a bit of a stretch, but I think it turned out to be a pretty good pizza. Well, I just chose it.

Since it was a good opportunity, I asked some of them to exchange their pizzas with me. Again, each unique and interesting in its own way!

For example, a pizza with coconut chicken, shrimp, broccoli, and dried tomatoes on a white sauce base. The creamy sauce and crunchy coconut chicken go very well together. On the other hand, if you put the same coconut chicken on a "verde" base with avocado, spinach, and pomegranate, they all take center stage! The main role of the dish is sometimes blurred.

If you are wondering how to combine them, we recommend that you start with a main dish and then choose supporting dishes that would go well with it.

Japan-only menus are also available.

The ability to customize freely is a big attraction, but there must be some people who find it hard to choose from so many options. For such people, we also offer an original menu "SPECIALTY PIES" with toppings pre-set from the beginning.

The following five types are from the "CLASSIC" menu, which is also popular in the U.S.


There are also two Japan-only items on the menu.


The "Bacon Jam" is exactly what it sounds like: bacon jam. It is a new sensation with a sweet and salty taste. Spicy Meatballs" is a recipe developed by the founder. The spiciness of the jalapeño and chili is addictive. Angry Bee" is named after an "angry bee," which sounds very spicy, but the honey makes it mild. Spicy and honey go well together, don't they?

Mozzarella is extremely delicious!

Here is a menu item that I would like to recommend, even if you are not interested in pizza. BURRATA" is an appetizer combining fresh mozzarella and vegetables (from 1,200 yen). The mozzarella is extremely delicious. It's intensely delicious! The thick, creamy cream spills out from the inside!

These mozzarellas are made exclusively for 800 Degrees from cows raised in California and flown to Japan. To be honest, I wanted to come back just to eat this.
