L'abeille chocolate is a chocolate mousse layered with mascarpone cheese mousse using two types of honey. The refreshing flavor of Italian honey from lemon flowers is combined with French honey from rape blossoms to add richness and depth.
Chocolate mousse is made from two types of chocolate. The balance of the blending amount is adjusted so as not to erase the flavor of honey. In addition, ginger is added as a secret ingredient.
The top of the mousse is finished with a sauce of Italian lemon, lemon peel and honey.
