Is it crispy with "fried twice"?
Is it crispy with "fried twice"?

The first Japanese fried chicken specialty store "Kyochon" from South Korea, " Kyochon Roppongi Store " (Minato-ku, Tokyo) opened on December 9th. Uri is a food style called "chicken x beer". Since its birth in 1991, it is a popular store with more than 1,000 stores worldwide.

But to be honest, I didn't come to the point at all. I think that "chicken x beer" is not so rare, like fried chicken and fried chicken. What are the characteristics of Kyochon's fried chicken? Also, how well does it go with beer? I ate it at the preview.

◆ The points are "fried twice" and "brush"

Let's start with the conclusion. Kyochon's fried chicken, the point is in "fried twice" and "brush".

[Fried twice]
As the word says, it is served "fried twice", but this is the point that creates the texture. By shaking the fried food once and removing the excess batter along with the oil, the batter becomes thinner and has a crispy texture.

[Brush]
Brush is a key item for seasoning. It seems that each fried chicken is carefully brushed with sauce. I was actually shown the process, but I am fascinated by the way the sauce permeates and colors everywhere.

◆ "For the time being, salsal"

In Kyochon, you can choose not only the flavor but also the part. Two types, the more crispy "Wing" and the juicy "Stick". In addition, three flavors are available: "original," "red," and "honey."

The most popular "Kyochon Wing / Drum" is a soy sauce flavor with garlic. An original flavor that is simple but addictive.

"Red Wing / Drum" is Korean-like, and it seems that "Chonyang Togarashi", which is famous for its spiciness, is used, which is more spicy than I imagined! The spiciness that comes after the umami is behind. It goes without saying that it goes well with beer.

"Honey Wing / Drum" is honey-based and has a slight sweetness. The batter is much thicker than the above two types, and it is devised so that the sauce is more entwined. In some cases, the batter is so solid that it looks like double the amount, so I personally recommend ordering with a drum that gives you a firm sense of the taste of the meat.

And there is another kind of fried chicken, "Sal Sal Chicken". This is a strip of breast meat sprinkled with rice flour and fried. Eat with 3 kinds of sauces, "Jambalaya" like pork cutlet sauce, "Red" which is spicy and spicy, and "Honey mustard" which has honey scent. Perhaps it's rice, it's accented with a white, round, puffy texture. Crispy puff Crispy puff ... I can keep eating all the time. If you think it's breast meat, it's extra.

Perhaps it was the effect of the brush, I got the impression that the sauce was evenly distributed. This is the balance that it is not too thin, not too dark, and is calculated together with the clothes. This may be different from other karaage. Also, the accented seasoning is certainly perfect for beer.

The restaurant is particular about "freshly fried chicken", so it takes about 20 minutes to serve chicken. Therefore, it is standard to wait for other chickens while eating salsal chicken that is fried early.

◆ When the "Chicken!" Switch is turned on

Other menus include various charcoal-grilled thigh meat steak "Dak-galbi", salad with chicken, noodles with plenty of chicken and rice, and so on. I'm going to eat chicken today! It seems to satisfy me day by day.

By the way, the inside of the store has counter seats on the 1st floor and sofa seats on the 2nd floor, so it's fashionable like a cafe bar.
