The media reported that canned peaches contain four times more vitamin C than fresh peaches. The content of vitamin E is almost the same for both. However, the content of folic acid is higher in canned peaches than in fresh ones.

Generally speaking, fresh peaches seem to be more nutritious. So why does the mysterious phenomenon that canned peaches are more nutritious occur? Dr. Christine M. Bruhn of the University of California, Davis explains:

"During the canning process, the cell walls of the pulp of the fruit are destroyed, making it easier for nutrients such as vitamin A to be absorbed by the body."

Dr. Bruhn argues that this is for the same reason that tomato sauce has higher levels of lycopene than fresh tomatoes.

Of course, some nutrients are lost by canning. The nutrient content also differs depending on the type of canned food. But at least, canned peaches have a higher vitamin C content than fresh ones.
