Ichiran Dazaifu Limited Edition

Dazaifu Passing Ume Ramen Ichiran will introduce a limited quantity menu item, "Dazaifu Limited Edition Dazaifu Passing Ume Ramen". It will be available at Ichiran's Dazaifu Sando branch in Dazaifu, Fukuoka, in a limited edition of 59 servings per day from March 28, 2023, and will also be available at the official online store from April 3, 2023.

The flavor of ume plum

with bonito (win), kelp (yorokombu), iriko (irikomu), and other lucky charms

is rooted in Dazaifu, Fukuoka. The flavor of ume plum can be felt along with Ichiran's well-known secret sauce and special fresh "pass noodles" made in Ichiran's forest Itoshima.

Auspicious ingredients such as bonito (to win), kelp (yorokombu), and iriko (to enter) are used to bring good luck, and the soup is flavored with ume (plum), the flower of Dazaifu City. The "59cm" long noodle, which is the same as the "Pass Ramen" at the Dazaifu Sando Branch, also serves to tease out good luck charms. You can enjoy the smooth texture that only fresh noodles can provide. Tonkotsu (pork bone) is not included.

The set includes one each of "Ume-scented bonito broth," "Passed noodles (fresh noodles)," and "Secret sauce. To cook, boil at least 2 liters of water in a pot, open the soup, and heat it in a separate pot. To heat the soup in a microwave, remove the soup from the bag, place it in a bowl, cover with plastic wrap, and heat at 500W for about 4-5 minutes. Try not to boil the soup to preserve the flavor of the plums.

Add the noodles to the pot and boil for 1.5 minutes, gently loosening the noodles and then drain in a colander. It is recommended to boil the noodles gently as they tend to stick together.

Add the soup and noodles to a bowl and pour the spicy secret sauce over the noodles to taste. The secret sauce is the same as that used in the Ichiran Pork Bone Broth Cup Noodle, and although it is labeled as "pork bone," it does not contain pork bone. It is said to be more enjoyable with toppings such as pickled plums, dried bonito flakes, and shredded green onions.

The "chilled" version is also recommended, in which case the noodles are boiled for about 2 minutes and served cold with a chilled soup.
