Marugame Seimen will sell "Kamo Negi Udon", a popular winter staple, from January 24 (Tuesday) to early March. At some stores, "Kamosuki Udon" will be sold at the same time. No take-out available.Each order of
Kamo Negi Udon
is made by carefully simmering the special broth, duck meat, and grilled green onions together in a hand-pot, so you can enjoy a freshly made, hot bowl of udon. Winter is the season when duck meat is delicious and the sweetness of white onions increases due to the cold weather. The udon noodles are made from flour every day at the restaurant and served with a special broth that is infused with flavor, allowing you to enjoy the unique taste of winter to the last drop.
The large duck thigh (made from duck meat) is used. The duck thigh is seasoned and flame broiled at the restaurant to bring out the best flavor.
White onions are carefully grilled in the restaurant to bring out their sweetness and add a savory flavor. When they are soaked in the flavor of the special broth, they become moist and tender.
The special thick broth is made from carefully selected shavings such as Hokkaido kelp and dried bonito flakes, adding richness and sweetness to the broth. The sweet fat of the duck leg and the flavor of grilled leeks combine to create a freshly prepared dish that can be enjoyed to the fullest. The aroma of chopped yuzu and mitsuba leaves served at the end accentuate the flavor.

Kamosuki Udon
: A bowl of udon noodles with duck meat, grilled green onions, garland chrysanthemum, and shiitake mushrooms in a sweet broth, tossed with a raw egg and served with freshly beaten udon noodles. The raw egg on top adds a mild and rich flavor and depth to the dish. Duck meat is used.
