Fluffy egg and white pork cutlet served on top of a bowl of rice (ume plum)

I tried

Katsuya

's " Fuwatama Shiro Katsu-don", a bowl of rice topped with a crispy pork cutlet and a fluffy egg. It is a bowl of Katsu-don with a crispy pork cutlet and a fluffy egg on top. The crunchy green onions are also a fun accent. I ordered the (ume) size, which has 80 g of pork cutlet. The price is 715 yen (tax included).

A bowl of "fluffy

egg on a crispy cutlet"

with a combination of "fluffy egg" gently prepared with white soup stock and white onions and a crispy, tender loin cutlet prepared by hand in the restaurant and accented with oyster soy sauce.

The Katsuya's standard katsudon is usually a pork cutlet topped with an egg and characterized by a dashi broth flavor. In this fluffy egg white katsu-don, however, the katsu and egg are neatly separated.

The cutlet is arranged in an interesting way, looking as if it is lying on the bedding of the egg.

Tonkatsu is served as if it were covered with a futon of eggs.

First, pick up a piece of katsu with chopsticks and bring it to your mouth to enjoy the crispy texture of the batter. As you bite into it, the salty and savory flavors of the soy sauce gradually spread out along with the delicious taste of the meat. The seasoning is gentle, so you may add a little tonkatsu sauce on the table if you like.

The batter stays crispy!

The eggs are fluffy and melt-in-your-mouth half-boiled, and can be enjoyed with crispy and fresh green onions. The seasoning is a gentle taste based on white dashi (soup stock). It is served with white rice underneath and can be enjoyed like "tamagokake gohan" (rice topped with an egg).

It can be enjoyed with crispy green onions.

When you eat the pork cutlet and the egg together, you can feel the crunchy texture of the batter and the thick texture of the egg at the same time, which makes for a complex eating experience. This dish is perfect for those who want to enjoy the individuality of both the cutlet and the egg.
