Udon

This year's "Nissin's Ode Donbei New Year's Udon" features "white udon" with "red pickled plums" to create a red and white color appropriate for the New Year, and "Tororo (yam) Kombu (kelp)" which is a Japanese word for "Yorokombu (dried yam)" is back. Kelp" is back. The rich flavor of bonito and the lingering umami of kelp in the sauce are enhanced by the melting of the "Tororo Kombu" in the sauce.

The noodles are firm and smooth. The sauce is richly flavored with the rich taste of bonito and the lingering umami of kelp. Ingredients include pickled plums for the red and white color, tororo kelp for "yorokombu," eggs, kamaboko, and green onions.

New

Year's Day Udon" is a dish of udon eaten from New Year's Day to January 15, as proposed by the "New Year's Day Udon Dissemination Committee. Because udon is "thick and long," it has been eaten since ancient times as a "lucky charm" to pray for longevity. By eating pure white and neat udon at the beginning of the year, it is believed to wish for the happiness of the people of the year.
