Production of white azuki beans is extremely low due to the difficulty of cultivation, and in FY2020 the area planted with white azuki beans in Hokkaido will account for less than 0.5% of the total azuki bean acreage. Shiro azuki is highly prized as an ingredient for high-end Japanese confectionery due to its color and strong flavor.

This is the first time Imuraya has used white azuki in ice cream. The azuki ice cream is made from 100% white azuki beans, which are slowly cooked from the raw beans using the "azuki bar" method to create a richly flavored azuki ice cream with a good graininess.
