Tendon sauce is seasoned according to regional tastes, with eastern Japan using two types of soy sauce and two different flavors of dried bonito flakes. The Western Japan version combines the umami of bonito, kelp, dried sardines, and shiitake mushrooms with dark soy sauce to create a mildly sweet sauce. The price is 590 yen. " Okayama Specialty: Torimeshi Bento" is a menu item available only at 22 restaurants in Okayama Prefecture. It consists of white rice topped with nori seaweed, a dashimaki egg, kinpira, and three pieces of karaage (deep-fried chicken).

This menu item is considered soul food, and is eaten daily as a to-go bento in Okayama Prefecture. Unlike rice cooked with chicken, the fried chicken is sliced and placed on top of the rice and served with a sweet and spicy sauce. It is loved by men and women of all ages, and is considered to be a lunch box that has taken root in the local area for a long time. The fried bean curd is cut into thirds so that the cross section can be seen, thus bringing the dish closer to the style familiar to the locals.
