Marinated Avocado and Tomato
Ingredients (serves 2)
1 tomato1 avocado
1 tablespoon vinegar
1/2 tablespoon olive oil and sugar
1/2 teaspoon salt
A pinch of coarsely ground black pepper
Marinated Avocado and Tomato Directions
In a bowl or Tupperware container, combine vinegar, olive oil, sugar and salt.Remove the skin and seeds from the avocado, cut into 1 cm cubes, and add to the container.
Mix the avocado with the seasoning liquid well. The avocado should be slightly melted and no longer cubed.
Cut the tomatoes into bite-sized pieces and add them to the container. Mix gently so as not to crush the tomatoes.
Sprinkle with coarsely ground black pepper.
