Kairikiya "Sago Dried Soy Sauce Ramen

Kairikiya has introduced a limited-time menu item, "Sago Niboshi Soy Sauce Ramen". It will be available until September 27. The price is 869 yen (including tax, the same below) for the regular ramen and 979 yen for the large ramen.

Kairikiya "Sago Dried Soy Sauce Ramen

One of the characteristics of this ramen is that it is made from "ago-niboshi," dried sardines made from flying fish, and has a unique shellfish-like sweetness. The name comes from the fact that the bodies of flying fish flying at sea have less fat, which causes a cloying taste, than those of other fish.

The 2022 version of the "Yakiago Niboshi" is said to have more umami, and the soup is said to have been created with more flavor from the grilled jaw, dried sardines, kelp, shiitake mushrooms, and green onions.

Kairikiya's signature "back fat" is used to add richness and depth to the thick seafood broth. The aroma of aosa (green onion) spreads in your mouth, and the crunchy white onion and myoga (myoga) add to the addictive flavor of the soup. It is also said to be made to go well with the "Yakimeshi Set Meal" and "Kara-Age Set Meal," both of which emphasize volume.

In principle, the "chin-niboshi shoyu ramen" is available at all Kairikiya stores, with a few exceptions. Excluded are the Hamamatsu Arikama, Mishima, Chatan, and Aeon Mall Okinawa Raikam stores.
