The sauce is a blend of three kinds of soy sauces with excellent richness, aroma, and flavor. In addition, kelp extract is added to create a delicious flavor similar to that of Mitarashi dumplings eaten at a sweet shop. The sauce is not only poured over the ice cream, but also over the mochi to make it look more like a Mitarashi dumpling.
The mochi, which is soft even when frozen, is made from a blend of shiratama (white bean) flour and joshinko (a type of rice flour). The dumplings have a crispy texture that is typical of dumplings. The powder made from crushed persimmon seeds is added to give the dumplings a savory flavor similar to that of baked rice cake.
